Just say if you type "watashi" in hiragana (not in alphanumeric); type it, and then you should have this "わたし", make sure it's underlined when you type it. Then press space, and choose from a list of most used Kanji, thus "私".

no, you write the japanese-style romanji yourself.
you don't use speech marks either; but you use "u" a lot like in written hiragana.

Go to regional and language settings, choose a new language, pick Japanese, apply, now pick your language in the language bar, choose Japanese Hiragana, now you can type. Do the same with Mandarin.
